My favorites are basil and coriander, parsley (continental and curly), mint (chocolate mint!), rosemary.
Basil - Good if you like pesto or basil and tomato bruchetta. It is easy to grow from seed,shrt-lived and vigorous, so just plant a little at a time. Plenty of sun and water, no fertilizer, and does well in poor soil. Nip it back often to keep it bushy. Grow Napolitano or Lettuce leaf basil for eating fresh, Genovese for pesto.
Parsley is an annual (I think?) and I tend to use loads of it. Keep seeds really warm to germinate or just buy a punnet of seedlings (much less frustrating). Needs a bit of fertilizer.
A friend of mine is growing a lovely Chocolate Mint plant that she says tastes as good as it sounds!
I love Rosemary in various savories and it smells so nice. Mine was looking really tragic in a pot until I planted it out in the garden, where, totally neglected and in full Aussie sun, it flourished, turning into a huge hedge! I believe in the UK it does better in pots where you can bring it indoors out of frosts.
Corriander for Thai recipies.... short lived and a bit tempermental. Keep planting more. Doesn't like the cold at all.
I have some mint planted among the roses to discourage aphids. It can go a bit feral - most people advise planting mint in pots.

rosemary does well in any weather really, if it looks rather sorry for itself just hack it down to the ground.
yuck chocolate mint, cant stand it, you can get all sorts of mint, im a bit of a mint hobby person, i have all sorts, use them in teas and tonics. in the summer.
i love thyme, bay, lavendar, lemon balm, fennel and just about any herb that i can get my hand on. i dont use them in cooking much, more for the smell they give out.

Lemon balm and peppermint tea is great. Lemon balm has a slight relaxant effect.

I have mint, chives, thyme, parsley and Bayleaf. but here's a thing. I keep killing rosemary. This year it was a plant my ssiter gave me, i took it over ot the apartment and it still died. I dunno, every other herb likes me, rosemary dies on me
